Time Flies!

It's already the middle of the week! Gosh are these days flying..still trying to focus on this schedule/menu...

Breakfast up til Sunday, is gonna be quick and easy and whatever I can pull off with what little is left in the pantry. Therefore, today i whipped up 2 pieces of Mom's Famous Butter and Sugar Toast with canned Tropical Fruit Salad (Pineapple, Red and Yellow Papaya and some White Guava), drained topped with some hazelnuts (Approx. 370 Calories) As for Amerie, 1/2 piece of bread, a whole cup of yogurt, and some Tropical Fruit Salad as well.

Activities: We learned a song called Clap Your Hands which she wasn't too interested in. She would follow along but kept on asking for Hot Potato and other of her favorites instead!!!
Amerie has hit a growth spurt big time! She has been asking to eat and have snacks 24/7. I mean, she is a growing toddler, so i just give her something light and healthy but goodness..it seems like she's eating every hour! I think it's a cross between her growing and her need to chew on something because of her teeth. But she does love her food!!!

Lunch: Banana Black Beans off of VegWeb.com. That's right, bananas and black beans baby. I was looking through this "sophisticated" baby and toddler recipe book that I had borrowed from the library, when I came across a recipe for black beans cooked in broth with thyme and onions, drained and topped with bananas and creme fraiche. I thought, hmmm, that sounds different and I've heard of beans and bananas before so lets give that combo a try. So I did a little searching and typed in Banana Black Beans and only came across like 3-4 recipes at the most and the first to pop up was from Vegweb (Another, an authentic Latino recipe for Banana Black Beans Empanadas which I will try another time!). Of course, I was grinning because not only was it VEGAN, but it just proves that being Vegan is not food boring..if anything, we love and appreciate our food more because becoming vegan has opened our palates to discover, try and create new combinations and new foods from what is "limited" to us and from what we see in different cultures around the world. Anyone Agree??? I could talk about the benefits of being Vegan but I'll save that for a rainy day (or when someone wishes to argue against my anti-animal practices). Back to the beans....

Black beans heated with a bit of coconut milk and soy milk with chopped bananas, sliced green onions (Or onion powder since I am on E with the groceries) and a pinch of hot chili powder, mashed and thickened and "poured" over rice..or in my case, chewy brown basmati rice.....At first I was skeptical of the onions and chili powder so I began eating it without the "spices" when I thought, oh what the heck! So I did a tiny sprinkle on top of my spoonful and boooomm....it hit me like a bag of rocks..What was I thinking in altering the recipe...put on the spices! It was such an unexpected hit of pure food ecstacy...the bananas and beans were sweet and creamy with a hint of coconut and the onions and spicy chili powder just complemented them sooo perfectly...the whole thing just melted together into the perfect dish! A 10 to the creator of this recipe...the BEST! NO LIE! And...even with the rice..not heavy at all and a calorie count of approx. 375.

As for Amerie, I made another one of Mom's famous breakfast dishes..Stir-Fried Rice, scrambled eggs, and pork (ham, bacon, bologna (the most popular), sausage, whatever we had!). Cooke rice, fried scrambled eggs, and fried cut up bologna or in Amerie's case, honey ham, all placed back into a large skillet with a bit of oil, stir fried til well combined and thoroughly heated, seasoned with salt and pepper. On the side, a mozzerella stick. I loooved this dish..Actually I think I'm gonna veganize it!! White/Brown Rice, Scrambled seasoned tofu and veggie ham or sausage..oh yes baby..it's coming!


Snack: Just a little boast about my most favoritist snack..Peanut Butter!!!!...my absolute addiction.... and I love it even more with carrot discs, bananas, apples or celery and some raisins. So I just took a pic of my little carrot sandwich!! A picture of how addicted I am!!

Excercise: A stop by the Gym where I did a 20 minute run, enjoying Tyler Florence where he cooked up a Mediterranean dish with a side of Lemony Chickpea Puree (or hummus) which I would love to try. Then a 20 minute stair masters workout that kicked my butt..but it went by fast thanks to my new Vegan Lunchbox book that I read while climbing.

As for Dinner, Pizza for Tim and Amerie and a Veggie Pizza Burger for momma. A warmed boca on top of a pieces of toasted bread, slathered in pizza sauce, topped with shredded spinach leaves, tomato slices and chopped olives, salt, pepper and oregano, thrown under a broiler to heat through and topped with another piece of toast. It would've been great with some cheese but that'll be for next time I guess =-).
