New Blogging! and No-No's

Time is getting shorter now. I am finding less time to blog and therefore, it is now time to start anew: Blogging as a working mom. Our schedule Monday through Friday will be as follows: Up before 5 AM, out the door by 5:30 Am, on the way eat/feed breakfast, drop Amerie to daycare around 6:45 AM, go to work, get off at 4:30 PM, head on home, pick up Amerie, entertain with snack and activities, get home at 6:00 PM at the earliest, cook dinner, clean, prepare dinner for next day, prepare lunches and snacks as well as breakfast if needed, prepare bags and clothing for the next day, get ready for bed and hit the sack only to wake up about 4 hours later. Yeah that's the disadvantage of working an hour and a half away going North. But, hey, a jobs a job and moneys, money. What more can we do but wait until bills are paid off and we find a place of our own further North. So therefore, I will be focusing on healthy, fast meals, staying healthy by calorie counting and on the road/office excercising, activities for on the road and much, much more.

So today...another day at home. I'm kind of off focus on what needs to be done but trying to get there....just overwhelmed. I'm working on our planned menu/schedule for breakfast, lunch and dinner..and all in between! UHHHH!

Breakfast: I had a craving for Cheerios again with sliced bananas,raisins, a sprinkle of flax seed and cold soy milk (400 Calories). As for Amerie, cold cheerios as well and a banana.

Lunch:I put my other half of Amy's Medium Chili to use and made a Chili Pizza...an oven broiled, crisped tortilla, spread with a thin layer of cream cheese, topped with chili and a sprinkle of corn...placed back in the oven to warm up; served with cold mango salsa and sour cream! Very hearty and good but gave me slight indigestion...eww! (About 400 Calories) As for Amerie, black beans and corn, green beans, some sour cream and homemade baked tortilla chips (A small flour tortilla, cut into 8 triangles, rubbed or sprayed with a little EVOO and sprinkled with salt, baked at 400 degrees on a greased sheet til crisp and slightly golden brown...but watch out, they will burn quick!)I actually got kind of addicted to them, grabbing a nibble here and there..another Health/Food No-NO..if it ain't the Health/Chef NO-NO of eating and tasting while you cook, it's the health/mommy NO-NO of feeling completely compelled to eat your child's unwanted foods and leftovers in excuse of not wanting to waste the food. Solution: Pack it immediately for later!

Dinner: I cooked up Chicken and Cheese Quesdaillas on Flour Tortillas for Tim, a half cheese quesi, okra and tomato stir and shredded grilled chicken for Amerie and I topped a grilled boca with an okra and tomato stir cooked with onions and plenty of fragrant spices such as thyme, oregano, and cayenne.


Activities/Growing Milestones: A box, placed on it's side as a tunnel...Amerie enjoyed going through it, but she found more pleasure in sitting in it and coloring the walls with chalk. It kept her entertained for a good while. As for my growing, typical, entertaining, active, toddler girl, her top and bottom bi-cuspids are coming through so she's been doing a lot of chewing, fingers in mouth and drooling and an occasional bite that's redirected real quick! Other than that, a lot of talking, singing, and playing. Right now she's "doing my hair" with her conditioner spray and brush..Help me!

Time to get back on focus now! More work...will it ever end!!??
