I'm addicted....

Uh..after driving back to back (literally 2 hours up, a 1 hour in between and 1 1/2 hours back down; both days during noon time!) I am exhausted..so I decided I just wasn't going to the gym today! Instead we went to mom's to chill, look at new cookbooks and her new cooking magazines, write down some recipes and just relax. I'm still trying to figure this blog thing..I want to see if I can add a page or something for my toddler for all mom's who like to getideas for things to do, food and all that but I am still working on it...any advice =-)?? Or better..any help!?? So today we remained lazy at Mimi's..Amerie had a blast because it's always a new place for her to run around in with "new" toys, a dog she can run around with and beat up and a little extra freedom...plus lots of good food for her like so far she's had creamy chickena and mushroom over rice, cashews she shared with Mimi, Caramel pudding and whipped cream she shared with Pappaw, and an Edy's Frozen Strawberry Fruit Bar that she shared with her Tita Kayla...can you tell why she loves it soooo much???? Toddler's dream and a vegans nightmare!!


As for breakfast...growing low on the food area so I decided to have some Peanut Butter toast with a layer of sliced bananas, sliced apples and raisins (and a drizzle of agave if you have any!) I am absolutely addicted to peanut butter so when I came to find that my jar had a little less than 2 tsp. left I was fairly depressed. 1 tsp. per toast =-(..it barely covered it, but it turned out to be just enough. Of course, I would've preferred, or more WANTED, a tad bit more peanut butter on each but hey what can I say I gotta go shopping!!

As for Amerie, I whipped up a half a piece of toast with, apple slices and a yummy Peanut Butter Apple yogurty dip (Apple/plain yogurt and peanut butter, mixed, with a drizzle of honey), and two boiled eggs with the yolks nicely removed.


She ate pretty well but I have come to notice that she hates change to her food so she didn't like her yogurt much!! Picky toddlers!!

As for lunch, I had Sweet Tortillas; a recipe I got from my Parenting magazine (Here's the Link: http://www.parenting.com/recipes-article/Recipes/Party-Foods/Sweet-Tortillas). A whole wheat tortilla with vanilla cream cheese, grated carrots, and raisins. I added some cashews for nuttiness and crunch (you know I always have to add my crazy nuts!!...addiction #2) It didn't call for it to be heated, but I did anyways which ended up being a bad idea! I didn't put enough cream cheese on my huge "quesi" so when I heated it, the heat kind of dried out my cream cheese and so it lacked the extreme sweet creaminess that I desired to be in it, so I sprinkled a little cinnamon sugar which made up for it! What would've been a good addition would have been some apple; sliced, diced, shredded..whatever. I'll have to try it next time!! So once again another cooking lesson learned.....

OOh a yummy snack to try....Red Delicious Apple Slices and Hummus (Addiciton #3 I can eat it too, by the spoonfuls)....really yummy. The crunchy and mildly, sweet, juicy apple with the creamy, garlicky, pine nut flavored spread just goes soo well together. They're meant to be. And the flavor almost reminds me of a stronger version of apples and cheese.

We ended up leaving late from my mom's since Tim was coming home late so when we got home it was a quick throw on of noodles with parmesean cheese, mickey mouse cheese pieces and brussel sprouts with chocolate covered raisins for dessert for Amerie and for me a Boca and lots of (really just 2 servings or 12) brussel sprouts! Simply quick and slightly, miserably filling..uh.

As for my addictions..Peanut Butter has and always will be my number one comfort food..let's just say I buy a jar every two weeks. As for chocolate, who isn't addicted?; nuts became a new fave, I love the different bites and flavors, they just compliment so many foods; and hummus..I love the variety of flavors and the one I have, Pine Nuts, is the best so far because of the creamy cheesy flavor it gives! What the heck..I'm addicted to food all together! =-)
