As for food…Breakfast was a colorful Fruit Pizza with my odd shaped tortilla (the only wrap/tortilla I can find that’s close to being slightly healthily vegan and only 100 calories…the missions wrap tortillas are 210 cals….that’s half my meal…no thanks). My tortilla was extra crispy the way I like it. On top of that I spread a layer of vanilla cream cheese I whipped up with just tofutti cream cheese, vanilla and sugar, then tried to beautifully arrange peach slices, messy defrosted strawberries (I like to freeze any extra fruit leftover..they’re great for smoothies or just eating frozen..I didn’t have any fresh ones so I defrosted frozen ones…let’s just say they were really messy and soft but super sweet!), bananas and blueberries with a drizzle of strawberry preserves mixed with a little H2O to make a “glaze”. On top a sprinkle of a mix of nuts chopped. Crispy, creamy, fresh and fruity and oh so juicy!! And surprisingly very filling; it kept me satisfied for a while. Amerie’s looked a little better since hers was on a small corn tortilla…she pretty much just ate the fruit and maybe a slice or two of the tortilla…she only likes her tortillas plain or cooked crispy like chips…next time I’ll crisp her tortilla up enough to make it crunchy instead of just warm and slightly toasted.
Lunch had to be quick and easy again today since I had to leave by 12 so I made a meal out of Muri Glen’s Black Bean and corn soup…I added some rice and tofu cubes and topped it with some sour cream and cilantro to make a nutritious and hearty meal that would hold me over for our 2 hour trip plus my interview at 2pm; and it did the job!!!
As for dinner….we got home late but Tim had Baked Whitings and another flippin’ baked potato..Amerie asked for pizza and had her Mickey Pizza which she gobbled down and I had a Colorful BBQ Boca sandwich with Creamy Slaw…I had a huge craving for BBQ and the whole way home tried to figure out what to make with the limit amount of food available..I need to go grocery shopping!! But I gobbled it down in a second…it definitely covered my craving for BBQ! It was a pretty darn good burger if I say so myself!!! =-)
Now it’s time for anxiety to kick in! Time to sit and wait….
