OLE!

May 5th equals Teacher Appreciation Day and Cinco De Mayo. So where to start...

How about First Time for TEMPEH...For Monday's Lunch I made Grilled Hot and Spicy Tempeh, a recipe from one out of many great vegan cookbooks, Veganomican. In this recipe Tempeh (I had bought Soy Boy's Whole Soybean Tempeh) is boiled, then marinaded in a Garlicky Hot Sauce Mixture, then grilled til marked and hot.

I had never bought and prepared tempeh before so I was quite excited to try this one recipe out. I opened the package and, of course, out of pure curiosity I took a small bite....ewww! It was dry, gritty, and slightly bitter. So I went ahead and boiled it as insturcted to prepare the tempeh and to remove the nasty bitterness, tasted it; not as bitter as before; tossed and marinaded it in the Hot Sauce Mix for up to an hour; tasted it: cold but, good; and grilled on it on a nice Cast-iron grill pan til marked and steaming; tasted it, moist and oh so yummo!



I ran upstairs to give my game-playing hubby a bite who, in turn, gave me the "this texture is extremely weird" face (tounge moving in and out and all)...although when I came back upstairs he once again praised my food and said that he loved the flavor and wanted more! Yeah me!!! Clap, Clap, Clap!


Overall, when it came to preparing the tempeh, it was just as easy as if I was making tofu. Taste: It definitely absorbed a lot flavor which canceled out the itty bit of bitterness that was still left after boiling. Texture: Moist, chewy, chunky almost but I loved it!



National Teacher's Appreciation Day: My daughter's daycare is celebrating National Teacher Appreciation week by suggesting the children bring in something small each day for the teachers just to really show them how much they are loved and appreciated for all they do. Tuesday was "flowers" and Wednesday is "cards".
(Oh,. Before I continue, the reason why I am posting this is because I could barely find anything, ideas, crafts, etc for this particular holiday; especially for daycare teachers. SO my post is mainly to inspire…)
So flowers…I personally find cut flowers a waste. Therefore, I decided to create something more permanent. I took a large popsicle stick, wrapped it in green garden tape, spelled “Thank U” with little sticky back foam letters vertically down the front, glued an origami rose to the top and glued a magnet on the back..creating…a permanent magnetic rose. Easy peasy!



As for the “card”…I took a folded piece of blank, white cardstock paper; folded it in half; traced my daughter’s foot prints on the front in which around the tracings I put a famous quote about teachers; I traced my daughter handprint on the inside bottom right page and put Love, Name; Then on the back I wrote a little heartfelt note to the teachers and then I let my daughter have her way with it; putting stickers on it, coloring it etc. Homemade and super simple.

Now for the best part CINCO DE MAYO…for my family and I, none of us are of a Hispanic Heritage. Therefore, we have no need or liable reason to celebrate this holiday. However, I am American and as an American we like to take holidays such as these (Cinco De Mayo, St. Patrick’s Day, ect) and use them as a great excuse to party, drink and make and eat really good food…and making really good Mexican Inspired food I did!!! Tim had a craving for Tostadas (we are addicted to Mexican inspired foods!!)so I created a Build-Your-Own Tostadas Bar…Chipotle Tostadas, Refried Beans, Chicken, Lettuce, Red Onion Salsa, Tomato Salsa, Olives, Vegan Sour Cream, Cilantro, Green Onions, Cheese…the works practically!! It was so good…and so miserable making!!! I was starving so I threw down three loaded tostadas making our meal Oh so delicious and absolutely miserable making!!
