6:45 AM..knock, knock, knock, "MOMMY!". I jumped out of bed, stomach growling, yes, happy to see my daughter but even more eager to see how my cinnamon rolls would turn out. We ran down the stairs making a promise to my daughter for "muffins", pulled out the pan, forcefully ripped the press-n-seal off, staired at my cinnamon rolls and found that they barely rose! They might have risen maybe 1/4 more in size..that's it! Oh I was so disappointed thinking that this was it..that this was going to end up being a a great looking, aroumatic, cinnamon roll sahped paperweight. Should've know..my fridge IS at it's coldest! I went ahead, placed them on a cookie sheet and allowed them to warm up as I prepped my Coffee Press for a steaming hot, roasty cup of frshly brewed Starbuck's coffee to go with freshly baked roll.
I pre-heated the oven to 4oo degrees, opened Tim's can of....placed them beside my cinnamon rolls and threw them in the oven. I paced around the kitchen, hungry and extremely anxious. I had to check on them so I flicked the oven light on to check...they still were not rising. Tim's were beginning to bubble, mine..still doughy.
okay let's add 8 minutes to the clock..
Slowly rising...with a tiny bit of bubble action...
NOT BROWNING!....Tim's are almost done.
8 Minutes are up and Tim's rolls are beautifully risen and golden brown ready to be taken out..so I transferred mine to a different pan, threw them back in and tried to forget about them as I topped the Pilsburys with what they call icing...
A few more mninutes later..they were done!!!! And what's even better is that they rose a bit more and looked absolutely perfect..okay well almost perfect. They didn't quite rise up..more to the side..but they had a golden brown, crisp outer layer; they were oozing with melted cinnamon sugar; they emitted the most wonderful, comforting smell and to garnish, a drizzle of homemade icing which melted right on top. They finished perfectly..but now it was time for the ultimate test! The TASTE Test...on to the judges table..
I pulled apart my first piece finding the inside looking perfect..slightly doughy, light, airy and fluffy...just what you would find at Cinnabon's (actually better!)..this was gooood...a small bite and YES! It tasted so perfect! I couldn't even remember what Cinnabon's or Pilsbury's even taste like..but I knew these were ten times better!!! Through all my worries my cooking experience was a complete success! But, unfortunately I had one more test...TIM's processed loving tastebuds.
I brought a steaming piece upstairs to my eat-and-back-to-bed husband..popped it in his mouth..crossed my fingers..closed my eyes and awaited the, what I assumed would be harsh, criticism..."Not Bad! Not like Pilsbury's...but not bad." YEAH!! I can take a "Not Bad!" That's better than "Eww." I went back downstairs and sat and enjoyed my second roll(Yeah I ate TWO!) with my daughter, grinning from ear to ear, relieved and very proud of my baking success!
I had accomplished my first Vegan Food Challenge! Only one question and one true challenge remains..could I pull this off again?? Would a second batch end up better, the same..or worse? We'll see!

10:37 AM I'm upsatirs getting dressed and my husband is finally waking up..(Must be nice!) he looks at me and comments, "Oh mommy..by the way I am very proud of you. Your cinnamon buns came out great! I could definitely eat the freshly baked buns..they were soo good. You would have to create a bettter icing (Mine was just confectioner's sugar, soymilk and a bit of Earth Balance Buttery Spread...very sweet! Hence the reason why a drizzle was all I needed. Next time I'll have to make a Cream Cheese Based one with more butter might just do the trick..more tangy and savory.) but the buns we're great! They left the best after taste..I was just too lazy to get up and tell you!" My response..."Thanks Babe!" but inside I was extremely excited!! AAAH! I did it! I past the "It's so "Real"" Test!!!!
