Breakfast: We're breaking down now...I filled up my bowl with the left of my Rice Krispies that I wished to save for other meals but decided to eat due to the fact that they were on the verge of getting stale so I figured I wouldn't let those crackling beauties go to waste so I threw them in my bowl with some soy milk, flax and a bit of sugar! (405 Cals Approx.) as for Amerie, her last PB ball (She loves them things!!), rest of her Cottage Cheese and Blueberries and a Rice Cake.
After breakfast, we headed to the Library to return our books and get new ones. Mommy didn't see anything goood so Ima "request"the ones I want when the come in. As for Amerie, she made out with 5 books and another Wiggles CD in prayer to losing teh other one!!!
Then we headed to Ukrops..My new favorite grocery store loaded with TONS of MY kind of stuff...and the one thing I came there for..Nutritional Yeast. Unfortunately, they sold it only in bulk so I had to purchase it in a twisty bag then transfer it to a glass container at home!(I save all glass containers! They are very useful for storage of homemade dressings, sour cream or any liquid leftovers you have. Like a whole can of olives that you just needed 4 from! And they're just as good for dry ingredients too...recycle baby!!) Ever since I became vegan all I've seen is nutritional yeast in everything, and always, personally, skipped it not thinking that it would change much! Well, I was wrong. I took a little taste to see what the rave was about...that stuff is good and cheesy!! I can't wait to use it! So Ukrops has become my Vegan store now! It had every single Lara bar you could think of! It had everything....vegemite, vegite seasoning, nutritional yeast, carob everything, organics,..they had it all! I was in vegan paradise!
So I purchased my 4 dollars worth of groceries and headed to the deli/prepared foods area to grab some sushi for lunch....brown rice wrapped veggie rolls and after reading Vegan Lunchbox, some Inari. I figured I would give this stuff a try! I was starving so we headed to mom's house, through my stuff on the couch, ripped my packages open and began to devour my food!! Oh my other addiction, sushi, was delicious and soooo healthy and the inari...to die for. The cold, fried tofu wrap was sweet and chewy from being soaked and the rice..well who doesn't love rice! All served with some pickled ginger and wasabi and soy sauce...I'll be there for often! As for Calories...you don't wanna know (Aproox 600+-). As for Amerie, she enjoyed the best Filipino Cuisine...Chicken and Veggies in an Orange sauce with rice. Yeah, I don't know what it's called..I never cared! It was Mom's Filipino Cooking so I just ate cause it was soooo good!
After that, we went out to grab some highly needed organic makeup at Ulta's and get my hair cut, then we headed home where mom loaded me with all her unwanted cookbooks that she was planning on putting in her yard sale this month! I was like, NO WAY!! Give them to me!! So I came home with a huge bag full of like 20 cookbooks ranging from 1980's to today...Cooking Light, Rachel Ray, even an old Good Housekeeping one with the ugliest pictures but good old recipes and great cooking info!!! I did try taking Paula Deen's but that didn't work! Of course, Tim just rolled his eyes in despair when he saw what more "junk" mom gave me to fill up our oh so small room! I Love it!
Then home we went for Dinner:
Montreal Seasoned Pan Fried Steak/Boca/Meatballs, with Garlicky Ginger Broccoli, and Stir-Fried Rice...my first time making Stir-Fried Rice! My mom filled me in on how to make it and it was very simple with just some oil, garlic, minced, rice and a splash of soy sauce! Tim loved it so it must have been pretty decent! I thought it was pretty darn good! A very well rounded meal indeedy!
Well, hopefully it won't rain too much tomorrow! I have to go grocery shopping desperately!!! Plus Tim's Birthday is on Monday and we have to celebrate on Sunday along with Grandparents’ Day on Sunday too! AAAH so much..what to do, what to do, what to do???
