Bring on the carbs baby!

Today was yet another busy day..we went out to run some errands which included us checking out a daycare, drug testing, the norm….but today was my day of fully loaded carb feasting.

Breakfast: Muesli with oats, dried fruits and nuts with milk and bananas the bestest meal ever! I’m telling you…gotta try it, gotta have it, I gotta put up the recipe! As for Amerie, she had two boiled eggs, ½ a cinnamon bagel with cream cheese and a plum.

Unique Muesli
- ¼ cup oats, if preferred for a smoother meal, slightly grounded in a food processor, wheat bran, wheat germ, or cream of wheat (or a mix of all!!) (I do ¼ cup oats and 1 tbsp of cream of wheat)
- Apple cider, soy milk or orange juice to cover (About ¼ cup)
- Squeeze of lemon juice (Omit if using milk!)
- ¼ apple, grated, ½ banana sliced and quartered ot ½ cup or less of orange pieces
- Plain or fruited soy yogurt ( I use 1 tablespoon of my homemade tofu sour cream..it tastes just like plain yogurt if you think about it!)
- Splash (or ½ tablespoon or more!) of pure maple syrup or brown sugar
- Toasted Nuts: almonds, pecans, cashews, hazelnuts, Brazilian nuts, peanuts, etc
- Seeds: Sesame, sunflower, grounded flax seed
- Dried Fruit: currants, dates, apricots, raisins, cranberries, cherries, etc
- Spices: Cinnamon, nutmeg, allspice, cardamom, etc and vanilla

Soak the grains in milk or juice covered and refrigerated overnight. In the morning, mix in soy yogurt, sweetener, nuts, seeds, fruits and spices. Top with fresh fruit and enjoy warm or cold!!! You may even make a mixture of all dried ingredients and soak overnight or even eat straight with milk or juice or even yogurt! Whatever you want, the way you want it to satisfy your yummiest desires.

As for lunch, to save on money, I decided to pack our lunch and we stopped by the food court at the mall to sit and eat in relaxation. No weird looks surprisingly! Amerie had a section plate with Pretzels, a small string cheese, peanut butter drizzled with honey and some huge lime beans and green peas. As for me, I made a peanut butter sandwich with dried cranberries and almonds and we both shared a pear.

And Dinner, Tim wanted chicken fingers after tasting Amerie’s nuggets last night so we made chicken fingers and tofu nuggets and curly fries. I had to make homemade bread crumbs for my tofu nuggets which turned out fine..but I think my bread crumbs were too big and course. I should have finely ground them in the processor after I had skillet toasted them in order for my tofu cubes to be more evenly and well coated. I think also. because they were so course, I ended up over seasoning my crumbs a little with tad bit too much salt…but my tofu nuggets still turned out brown and crispy and went great with some Barbecue Sauce and Ketchup. (Amerie’s, of course, looked awesome since I used regular bread crumbs). Well along with my tofu nuggets, curly fries, barbecue sauce and ketchup, I also had my snack that I had prepared for today; sliced carrots and grapes with my Cinnamon Vanilla Sweet Cream Cheese dip. I had taken it with us, but we came home early enough to have snack at home and Tim wanted to eat dinner early, so instead I had my last vegan biscuit =-( (more carbs!). But then I realized I needed to eat it since it was out all day and it did contain cream cheese so it was eat it or toss it! I decided to definitely eat it!!! It was such a cold and creamy and so sweetly good ending to my carb filled day! (And trust me I felt all those carbs too!! UHHH….!)
