This day flew past! I stayed busy cleaning, getting things organized and cleaned and pretty much getting myself together..and I’m not done yet! So I woke up early this morning, and went straight downstairs to fix my husband’s lunch box and to make breakfast..strawberry pancakes topped with strawberry and banana slices, almonds and powdered sugar and a side dish of oranges, strawberries and bananas sprinkled with walnuts and cashews. I had been wanting those yummy pancakes with strawberry slices pressed in right before flipping, found in every bite..mmm…my pancake was beautiful and so perfect looking too (For the first time!). I wish I had the chance to take a pic of it, but unfortunately, I was too focused on getting it done and being quiet, not to wake my unexpected guest who was sleeping on the couch. As I devoured my pancake and fruity salad..I realized I forgot my sugar and spices in my pancake..=-( Oh well too late now..so my pancake was tad bit tangy from the warm strawberries, but still tasty and what I wanted! I continued cleaning and working when Amerie finally awoke late in the morning. We went down to fix her breakfast where she had mini pancakes and a fruit salad of strawberries, oranges and bananas, as well. As I fixed her food and sat with her while she ate I discovered a serious bad habit I’m sure every food lover and cook has; nibbling while preparing and cooking. Amerie and I love “mixes” like cake mix, muffin mix, pancake mix…any mix and so we have a tendency to dip into the mixes while preparing as well as nibble on every bit and piece of food while cooking..a bad habit..but a yummilicious one!

As for lunch, I had a huge salad with like everything I had in the fridge..I mean everything! As for my dressing, a mix of hummus, balsamic vinaigrette dressing and a bit of water making a mock Caesar like dressing..creamy and tangy! It was a very good salad, but one low in calories so I ended up eating a mini cinnamon bagel with cream cheese as well to kind of fill that little bit of emptiness that was still left after eating the salad! As for lil missy, a salad, a piece of turkey, a biscuit, some yogurt and some grapes and blueberries! She was hooked for lunch and she ate it all except the salad..she kind of chewed on that!
Afterwards, we headed on to the gym for a well needed workout! As for dinner, Tim had Popcorn Shrimp, a baked potato and I made Bisquick’s Garlic and Cheese biscuits like the ones at Red Lobsters..supposedly they taste pretty well..not the same…but close enough if you’re craving them! I made Amerie some homemade chicken nuggets and she also had a biscuit and as for me..

Stir fried bok choy with green peppers, mushrooms, green onions, cashews, sesame seeds and a mix of soy sauce and lime juice to give it a little flavor. It was a quick vegetable recipe I copied called Bell Peppers with Bok Choy stir frying a lot of bell peppers and then adding the bok choy and a choice mushrooms or cashews but I decided to kind of customize it. It was pretty good..but I should’ve added more mushrooms and cashews to kind of equal the proportion between the bok choy and everything else…but it was great combo of the savory, umami tasting nuts and mushrooms with the lightly bitter greens and the salty, sour of the soy sauce mix. And on the side a boca cooked on the stove with a little brush of teriyaki glaze and topped with sesame seeds and green onions. One asian inspired plate!
Another day..another busy life…what can I say…
People find life entirely too time-consuming.
