This morning was another rough one. Amerie was up at 3:45 and with me in there, she was once again having trouble sleeping. So when alarms begin going off around 5:00, my stomach was starving for food, and she juts sat up and wasn’t going back to sleep, I decided to just deal and gave her some books and let her play in her crib with her books and her hanging musical toy on her crib which was blasting music!. Well I told her I was going out and going to be back later. I closed the door behind me expecting cries but she actually kept on playing. So I climbed back into bed to rest a little but found my stomach literally in pain to eat so I went downstairs to fix me a quick breakfast bowl of Cheerios and Rice Krispies with bananas and cold soy milk as well as get Tim’s lunchbox ready; Something I do every morning. Well, I came back upstairs with my bowl and decided to juts hop into the bed and read my Bible since she was still playing. Well once I finished I decided to go check on her and found her curled up in the corner back asleep. It was so cute! I was shocked to find her asleep, but I’m glad she was able to fall asleep on her own..that was a definite milestone and a start to teaching her to fall back asleep on her own. So I just let her be and decided to take an almost 2 hour nap myself!
When I awoke for the morning I discovered another joy of being a mom and chef….the lovely oily, grease stains and food spots that randomly show up on the your clothes; even on the ones you thought were clean. Last night after cooking nothing greasy, I noticed oil spots all over my shirt. Being the clean freak that I am, I cannot stand stains so I immediately went upstairs to spray some Spray n Wash on it and hand wash it..well this morning I noticed that it didn’t come out so now it’s time for treatment two; grease fighting dish liquid. Well, I went ahead and left that to dry and low and behold I pull out my next gym shirt to find two grease spots on that as well!!! Where are they coming from and why??? Either I’m a greasy sweater or I’m clumsily cooking…or something!!!! So I have to pre-treat that too! Thankfully my last shirt was looking half way decent, but I love how I always find random stains and spots on my clothes. Should have known it does come with the full job description you know!!
As for Amerie she slept in late today and has been eating ever since! She woke up late, chilled and played a little then had a bowl of cereal and a banana which she weirdly didn’t want much of, then she ate a rice cake, and since I fixed lunch she wanted something too so I made her a small plate of grapes, mixed nuts, cheese and chips and she cleared her plate, except for some of the nuts that she found some amusement in for a while; trying to hide them under her plate! As for my lunch, I had made a “7 layer Mediterranean hummus dip sandwich”. I found the recipe on recipezaar.com for a 7 layer Mediterranean Dip and decided to make it a sandwich. However, it’s more like 6 layers since I don’t possess any vegan feta and haven’t tried to make any yet either..that’s on my list. It was strong in flavor but I think definitely would be better if I had some vegan feta so Ima make some and try it again! On the side..or well behind =-) was my line of sliced plums and grapes sprinkled with my favorite cashews! Very satisfying and a piece of Endangered Species Cherry Dark Chocolate for dessert!
Since Amerie was up late we went to the gym early and when we got back I quickly whipped up some Monkey Bars; a recipe off of chooseveg.com and the best banana snack ever!!!! It satisfies every part…it fills to just stop hunger and it satisfies the need for something fruity, crunchy, peanut buttery and chocolaty all at the same time. All it is, is a banana split in half both ways and a concoction of peanut butter, maple syrup, cocoa powder and Rice Krispies, spread on top and placed together like a sandwich and easily destroyable in seconds!!! Mmmm……
So I finally found a couple things to do with Amerie and we are creating a book for her with lots of textures and animals and pictures. Well before we did that we made her a treasure bottle filled with colorful sparkly trinkets and rice to look like a real bottle filled with treasure and sand and she loves it! Then we started on her book where she had a ball drawing on a piece of paper and playing with tape and stickers. I never knew tape could amuse a toddler for so long! It was so funny to watch her get it stuck on her fingers and try to find a way to get the sticky side down…so tape is the new toy! But we had a wonderful, relaxing bonding time which was what we needed and can’t wait to make a daily tradition, continuously adding to her book….
As for dinner, Tim had chicken and Mexican Cheese Quesadillas, Amerie had (a lot!!) of noodles with chicken and Teriyaki Green Beans (which I munched on a few!) and I whipped up Sesame Lime Noodles (Eat, Drink and Be Vegan with Soba noodles though). It was really tasty and very Asian. I liked the lime flavor that stuck out most..and the little bits of garlic and ginger gave it a great spiciness and kick in each bite!
Our day was fun and just relaxing. Amerie and I had a great time relaxing, playing and overall bonding and it made me feel accomplished and pleased to be a mom..something I needed!!! Oh and I have a job interview on Thursday!!! Wishe me luck and cross those fingers for me!!
