Family Pajama Bonding

What a Sunday! Today was a chill in our PJS and do absolutely nothing day…well at least for them. I, of course, had to do something but that’s me; always staying busy. Unfortunately my stomach is still messed up from yesterday between the cramps from pre-maturely doing ab workouts before my breakfast was settled and then loading up on a huge, calories loaded Burrito Bol (plus chips) and a beer I think did me in! I haven’t been hungry much and I’ve been pretty, plain, miserable feeling. So because of that I ended up sleeping in til almost 6 so I got up realizing the time and went downstairs to fix my already determined breakfast.

I have been dying to have a bagel…..specifically one from Einstein Bagels, but I’m not sure whether or not their vegan…so when we went splurging yesterday, I convinced Tim to have Brown Sugar Cinnamon Bagels (already checked for vegan approval!) for breakfast so I could have one or two or all! I was soooo happy!!! Therefore, I already decided that I was going to have 2 mini bagels with Tofutti cream cheese for breakfast, but I needed something just a little more to make it completely tummy satisfying, so I found a recipe in my Toddler Menus Book for a Cream Cheese and Tangerine bagel. Of course, I had to make it into more of a sample platter because I wanted so many different things (I mean, what you expect? I haven’t had a bagel for months!!!!) On my sample platter, cream cheese and oranges, cream cheese, oranges and raisins, cream cheese and raisins, and plain cream cheese all sprinkled with walnuts and a bit of cinnamon sugar. I was in heaven; so high that I devoured it and didn’t even enjoy the delectable taste of my bagel and cream cheese that I had been desiring and longing for, for so many months. MMMM…no matter how crappy I felt, that meal was so so good! I finally filled my craving! As for Tim and Amerie..Tim had some pancakes and “fried” sausage with maple syrup and Amerie…cottage cheese, orange slices, sausage, and half a cinnamon bagel.

Soon enough came lunch! I wanted something with red kidney beans and found a recipe off the can of Del Monte Green Beans for a Cool Vegetable Bean Salad which sounding refreshing. It contained, Del Monte Green beans, red kidney beans, celery, carrots, green bell, black olives and green onions tossed in a vinaigrette, specifically balsamic. And of course a boca flavored with Barbecue Montreal Steak Seasoning. A perfect combo…reminded me of a picnic. Amerie munched on her leftover chipotle meal and chips as well as some of my bean salad. And so typical, she ate pretty much nothing but chips!


As for dinner, Chicken and Tofu Tacos!! I drained and pressed my tofu, froze it, thawed it, then crumbled and cooked it til it was golden brown. Then I added taco seasoning and water and cooked it the same way you would beef or chicken and boy was it flavorful! My tofu was served in two hard tacos with lettuce, tomatoes, Taco Bell mild sauce, and tofu sour cream. Tim and Amerie had cheese with their tacos of course! However, I learned that only tacos for dinner is not fulfilling enough because all three of us were still hungry! Tim further chowed on green apples and caramel and some beef jerky and Amerie had a hard taco shell, a plum and some crackers..as for me a piece of chocolate and later one a tea. So next time we have tacos…we need to have a side, or a hearty dessert or maybe just make more tacos! But there’s only so much you can eat. Hmmm…now I have my cooking gears churning…

Our day was very enjoyable. We were able to relax, watch soccer ALL DAY (Tim’s a soccer fan..or really an addicted freak!! (Go Barcelona and Chelsea! But Amerie and I love watching sports, or as she says it, the “ball” so we don’t mind one bit! Our faves are definitely soccer and football!), and kind of enjoy each other’s company as a family. It’s something we need every now and then; to really just enjoy a day of family bonding and playing and most of all…eating!!
