Today was pretty relaxing. I had everything planned, organized and ready which left me feeling cool, calm and collective all day; well, except for the time after the drive where I felt extremely tired. Those drives kill you! So I woke up early this morning, not very hungry, but wanting some cold cereal so I had 2 servings of Multi-Grain Cheerios with some sliced banana and frozen blueberries and milk. Bananas always go with cereal; as for the frozen blueberries, not only do they compliment the banana, they also keep my milk ice cold, which I love, and they turn my milk blue too! =-) Amerie had cheerios as well with applesauce and a blueberry banana yogurt smoothie.
After breakfast I got everything ready; lunch, snacks, dinner, cleaned up a little, bags were good to go….I mean I was set! It kept me busy all morning and that included getting Amerie and I dressed and ready too! We had to have lunch early today (which was literally two hours away from Amerie just having breakfast), so I threw together a little plate of a rice cake, some mixed nuts and a plum for her and as for me I made a California Boca Burger

with 2 pieces of toasted bread, a boca, spinach (well, it was supposed to be sprouts), avocado and vegan Thousand Island Dressing; another recipe from the Skinny B’s. It was a simple sandwich with lots of different textures and strong flavors and a whopping 400 cals too!! But it did oddly fill me up! The Thousand Islands gave most of the tang along with the salty, savory boca but the avocado did the trick with its creamy texture and mild taste that toned down all the strong kicks. It was great!
After lunch we headed off on our journey to the North…..a long drive and 1 ½ hours later we were there. I took my second interview, which I felt went very well, and 30 minutes later, we were on our way home.
For dinner, I had prepped yet another Skinny B recipe,

Edamame Three Bean Salad with a Dijon vinaigrette. What I loved the most was that it called for three different herbs; fresh parsley, fresh cilantro and fresh basil (all herbs I got form my mom’s Aero Garden!) which gave my tangy salad a good, mild and refreshing taste. It was very beany! As for Amerie, she had some bean salad, a boca and some rice and Tim’s left over potato and as for Tim..once again a steak and a baked potato!
At the end of the day, to relax us even more, and kind of a toast for a great second interview and hopefully, a door to a new job…Tim and I had a nice cold beer. While he had his typical Bud Light, I opened up a bottle of Blue Moon

which is an unfiltered (yeah vegan!) Belgian White Wheat Ale with a very crisp flavor with hints of Orange peel and coriander and a strong, but smooth flowing finish. I couldn’t get the orange peel or coriander at first, but as I neared the end and my drink began to warm I began tasting the spicy, citrusy hint of the orange peel which was very yummy. If only I had a mug to serve it in, I could have added an orange slice, as recommended on the bottle, to enhance the spices of the beer, but hey it was still reeeeaaally good! Maybe next time! Now I’m anxious to try their fall pumpkin flavor. If the regular was good, I’m sure the pumpkin is even better!!!
What a day! To end with a verse or quote. Today, a verse that I strongly believe in to coincide with my hopes and prayers of getting this job!
