Rainy Days!

Today is our "Chill in our PJ's while Mommy catches up on chores and things to do and Amerie plays all day" kind of day! It was dark, gloomy and continuously pouring outside which made it the perfect day to just stay in and ctach up on all my work. Unfortunately, that mean t another day of no gym =-( but I gotta get used to it I guess! Once I start my job I'll only have time to go on weekedns anyways..I better start learning how to do those in office workouts: the ab crunches while sitting in your chair or the desktop push ups haha that's gonna be funny! So due to the lack of time, my blogs will be shorter (YEAH right!) and I am going to focus more on nutrition and health for thw orking mom, lunchbox meals and healthy, quick and easy dinners. (I guess I'll be watching the food network a lot!) That will begin next week....but for now..

Breakfast..I enjoy breakfast so much. It's a shame I'll have to start making it quick, easy and portable. I'm sure I'll find a way to make oatmeal portable =-) So this morning I had 2 pieces of what I call, my Mom's Famous Toast...Overly Buttered Bread sprinkled with sugar, broiled til edges are golden brown. Broiled toast is the best toast ever, but no one ever makes it like mom's. I remember when my sister, my brother and I would anticipate for Friday's to come because we knew thatit was Mom's day off and we would convince her to cook us breakfast and when it came to her sugar toast, I would down 4-5 pieces! Today, my 11 year-old brother still wakes her up every Friday morning to make him breakfast...I'm sure she's asking..will it ever end? NOPE! =-) Along with my sugary sweet and crunchy toast I made a papaya boat filled with blueberries, pineapple chunks and kiwi with a sprinkle of coconut and cashews...fruitilicous! As for Amerie, she had her own fruit salad with papaya, a piece of cinnamon toast and some yogurt.

Lunch was another throw together. I prepared a simple tin plate with a Turkey and American cheese roll up in a warm tortilla, some apple and grape slices, and some hummus. As for me, Amy's No Chicken Noodle Soup, 3 crackers, some apple and carrot slices with some peanut butter and raisins. Yummo! I love Amy's products and today's trial was her No Chicken Noodle Soup. It was so amazing how it tasted just like warm chicken noodle soup on a cold afternoon like today! The soy protein had similar texture and taste to the chicken, the noodles and vegetables were soft and flavorful and the soup was so warming and smelled so great! To be honest, while eating, I was thinking, and I couldn't even truly recall what Chicken Noodle Soup tasted like. Maybe a little saltier but they were so similar that there was no need for comparison; it was like eating the real thing! Another foodie trial given an A+! Definitely will buy that again!

And Dinner, I made Szechuan Zucchini Stir Fry on top of spaghetti noodles and grilled chicken/tofu.....the type of dinner I need to make more often with healthy choices that both my family and I can eat with a simple turn of ingredients! We were all very satisfied by dinner...It was filling, tasty and delicious and simple to make!

All in all, it was just another one of them days...except it was gloomy and rainy outside...as for tomorrow...more errands!!
